Here are the recipes for the Special K Loaf with a Vegan Option
Ingredients
- ¼ cup olive oil or margarine
- 1 onion finely diced
- 3 packages of George Washington brown broth
- 6 well beaten eggs
- 4 cups of small curd cottage cheese
- 7 or 8 cups of Special K cereal
- 1 ½ cups of ground walnuts
Instructions
- Beat eggs and put in the broth – mix well
- Sautee onion in the margarine (olive oil)
- Fold cottage cheese and walnuts and onion in eggs
- Fold in special K
- Pour in something like a 9 x 13 buttered dish (like pyrex)
- Bake at 350° for 45 minutes to an hour
Ingredients for Vegan Option
- ¼ cup olive oil or dairy-free margarine
- 1 onion finely diced
- 4 packages of George Washington brown broth (or 2 teaspoons vegetarian-chicken seasoning)
- 1 teaspoon salt
- 4 Tablespoons flaxseed, ground
- 2- 16 oz. packages of firm tofu, drained
- 2 cups dairy-free milk, unsweetened
- 8-9 cups special K cereal
- 1 ½ cups of ground walnuts
Instructions
- Sauté onion in dairy-free margarine (olive oil), until onions are clear.
- In a large bowl, mash the tofu well. You can use a potato masher.
- Mix the sautéed onions into the tofu.
- Add the ground flaxseed to the dairy-free milk, and stir together. Let it sit for 5 minutes until thickened slightly.
- Add milk mixture, walnuts, and broth to tofu mixture; stir well.
- Fold in the Special K cereal.
- Pour into a 9 x 13 greased dish. Bake at 350° for 50-60 minutes.
